Going to throw myhat in the ring. I used to use Cloudflare tunnels which are super easy to use and work well. Issue: it’s cloudflare and cloudfalre bad, and works best if you also have your domain registered there.
Anyways, I now use https://docs.pangolin.net/ which does a very similar job. It works great and IMO is easier to admin than tunnels, especially with auth and such.
I run pangolin on a racknerd cheapo server and traffic in forwarded to the box in my cupboard. Pangolin have some refetal links to hosting that give you some discounts.

You asked for personal setups so I’ll answer with what i have. Jellyfin does my video stuff. TV, movie etc. And for audio I use navidrome. I tried to use jelly for all of it but the music playback sucked (for me). Navidrome is subsonic api compatiable and gives you more options for clients therefore. I even wrote my own tui player :)
If I were you I’d set up jellyfin (not exposed to the internet) and see how it goes. If the music work then awesome, you have a one stop shop for all your media. If not, then add navi on top.

I just switched back to vaultwarden. My vaultwarden data is backed up as part of my nightly backups. Desktop and android use bitwarden clients. Seeing as https://codeberg.org/small-hack/open-slopware/src/branch/main states keepassxc is using AI to create PRs. Otherwise you could see how seafile might work for you to sync your keepass db. If you are on android with termux you can run syncthing in termux which also works and avoids the issue with the syncthing fork

Initial self hosting should be non critical for yourself only for the reasons you mention. After you have worked out kinks and learned more about it all you can start using software for more critical tasks. I still don’t use my self hosting for anything apart from myself (except jellyfin for family) because I don’t need the pressure of availability :)

Yep. I had it set up in a docker compose setup with tailscale and gluetun. There is actually decent documentation for this on gluetun docs i think.
Then your tailscale container exists via gluetun which connects to your VPN.
